Chef’s Sandwich – Chanterelle!

INGREDIENTS steamed pastrami 10dag fresh chanterelles (or frozen) ricotta 1 tsp mayo 5dag onion 1 clove of garlic 1 tsp white wine dill PREPARATION Drench chanterelles in a salt water to remove dirt. Chop it but not too tiny. Next scorch the mushrooms o a molten butter with onion and garlic, then add wine and wait until it cools down. Add ricotta, mayo and chopped dill. INGREDIENTS rhubarb chutney steamed pastrami rye bread wasabi sauce RHUBARB CHUTNEY 100g rhubarb 1 red onion 2 tbsp sugar half tsp cinnamon half tsp ginger powder 15ml apple vinegar pinch cayenne pepper PREPARATION Rinse the rhubarb, dry it, cut off the edges and dice it.
